Butter Squash Honey Roll

His sanguine temper, and fearlessness of mind, operated very differently on her.  She saw in it but an aggravation of the evil.  It only added a dangerous character to himself.  He was brilliant, he was headstrong. Lady Russell had little taste for wit, and of anything approaching to imprudence a horror.  She deprecated the connexion in every light.




Butter Squash Honey Roll

Ingredients :

For the butter squash cake:

100g flour
3 eggs
180g sugar
80g chopped walnuts
½ tsp baking powder
½ tsp baking powder
½ tsp ground cinnamon
½ tsp ground cloves
¼ tsp salt
2/3 cup butter squash puree
Powdered sugar for topping

Honey Cream filling:
125g unsalted butter, softened
2 tbsp honey
60g powdered sugar

Directions:

1)      Preheat oven to 180°C & grease baking tray.

2)      Beat eggs & sugar till creamy. Pour in butter squash puree. Stir well.

3)      Fold in all the dry ingredients in egg mixture till well combined. Spread evenly into baking tray. Sprinkle with chopped walnuts. Bake for 15 minutes till top of cake spring back when touched. Roll up cake & tea towel together, starting with narrow end. Cool on wire rack.

4)      For honey cream filling: beat softened butter, honey & sugar till light & creamy.

5)      Unroll cake from tea towel & spread with honey butter cream evenly, re-roll, trim ends with knife. Sprinkle powdered sugar before serve sliced.
